Curd is great especially because of its high protein content- in 100 grams in it you can find up to 18 grams of protein while only 2,5 grams of fat and about 4 grams of milk sugar. We have prepared for you 5 curd desserts that you can enjoy without remorse and moreover, you will enjoy the meal.
Mini rolls full of protein
For sponge cake we need:
- 3 TBS wholemeal spelled flour
- 2 TBS spelled flour
- 2 cups (50 g) vanilla whey protein
- 3 spoons xylit
- 1 baking soda
- 6 egg whites
- Optional: lemon peel / orange peel
For cream we need:
- 500 g defatted curd
- few drops flavor drops – vanilla flavor
For icing we need:
- 100 g dark chocolate containing fat at least 52%
- 1 TSP coconut oil
Instructions
Set the oven to 160°C, whisk the egg whites and gradually addxylit. Mix gently sieved flour, baking powder with protein and lemon peel. Spread it on baking paper and bake until the sponge cake is ready. Put the sponge cake out of the baking tin. With the kitchen towel form the shape of roll from the hot dough so thatshorter sides begin to roll to one another. After cutting we should get about 6 cakes. Prepare cream while the dough is cooling.
The cream can be made by mixing curd with vanilla yogurt or we can flavor the curd with calorie-free dropsflavor drops (I used vanilla flavor). *If you want to be sure that the cream will hold nicely, you can use a gelatin stiffener according to the instructions on the package, but it is not necessary. Finally, wrap the mini rolls in chocolate melted with coconut oil and leave to cool.
Simple unbaked chocolate cake
For corpus we need:
- 80 g butter
- 140 g oat flakes
- ½ripe banana (or 1 small)
- 20 g sweetener, for example erythrit
For filling we need:
- 500 g defatted curd
- 100 g dark chocolate
For icing we need:
- 100 ml liquid 12% cream
- 100 g dark chocolate containing fat more than 50%
- 1 TSP butter
- few drops vanilla flavor drops
Instructions
Prepare very simple corpus from oat flakes, butter, banana and sweetener. Grate the solid butter roughly with a classic grater, then add banana puree with erythritol and oat flakes. Make a thick body and press it into a small round form that we have previously lined with a baking paper.
Melt the chocolate in the water bath, wait for a while, mix it into the curd while it is still weak. Then spread the filling on the corpus. To prepare icing, melt the chocolate with butter in a pot on the smallest fire, add cream and mix until desired consistency. Flavor with vanilla drops flavor drops. Pour the chocolate over the cake and leave it set in cold. We can decorate it with fruit.
Foam muffins with chocolate cream
For corpus we need:
- 4 eggs size M
- 3 TBS birch sugar xylit
- 1 full TBS spelled flour
- 1 full TBS wholemeal flour (you can also use spelled flour)
- 1 full TBS vanilla flavor protein
- 1 TSP baking powder
For cream we need:
- 500 g defatted curd
- 100 g dark chocolate containing fat at least 52%
- few drops flavor Drops with caramel flavor

Instructions
Set the oven to 160°. Whisk slowly the foam from eggs whites and gradually add sugar and egg yolks. Sieve flour, protein and baking powder together. Spoon by spoon gradually add the sieved mixture into the whipped foam. Divide the dough into molds (ideal silicon for better handling) and bake.
Melt the chocolate over steam and whisk the curd into it. If you want to sweeten the cream even more, you can add few drops flavor Drops. Decorate the muffins after cooling and keep it in cold.
Cheesecake with forest fruits
For lower part of cheesecake we need:
- 1 cup (90g) wholemeal crisps (or 90 g oat flakes)
- 1 TSP agave syrup
- 1 TBS coconut oil
For filling we need:
- 3 eggs
- 750 g defatted curd
- 100 g vanilla whey protein
- 2 full TBS spelled flour
- 3 TBS xylit
- 2 TBS coconut oil
- vanilla drops flavor Drops
- 1 TSP cinnamon
For upper part of cheesecake we need:
- 1 cup forest fruits (can be also frozen)
- 2-3 TBS yogurt
- 30 g potato starch (or vanilla pudding without sugar)
- sweetener up to your taste (we used BIO Agave syrup)
Instructions
Lower part (corpus)
Line the large round form with baking paper. Grind the crisps or oat flakes and mix it with melted coconut oil and agave syrup. Press it on the bottom of the form and bake at 160° for 2 minutes.
Filling
Prepare foam from egg whites. Gradually add xylit, curd, sieved flour with protein and remaining ingredients into the egg yolks.Finally lightly mix the foam from egg whites by hand. Pour it into the form and bake it at 160° for 40 minutes until the cheesecake is ready(not dried!). Finally, let it rest in turned off oven with opened door.
Upper part
Mix potato starch or vanilla pudding in a little water (approx.1,5-2,5 dc.). Add fruit, sweetener, stir it and prepare it in the same way as we prepared pudding. When the cream is thick, let it cool for a while. Add yogurt and spread it on the cake. All done!
Cheesecake from mixer
This cheesecake is really simple and especially it is macro-friendly because of high content of protein and lower content of fat and sugar. The basis of this recipe is to have a good mixer (or electric grinder) which can grind for example flax seeds for small particles. The the recipe is simply a toy.
Corpus:
- 50 g flax seeds (or cashew nuts)
- 30 g instant oat flakes (or still dry buckwheat instant porridge)
- 50 g dried fruit (for example dried raising)
- 1,5 – 2 cup water
- 30 g dietary fiber – psyllium
Cream:
- 500 g defatted soft curd
- 250 g white yogurt (containing fat about 3,7%)
- 20-30 g xylit
- 1 pack gelatin stiffener suitable for creams

Prepare a form of which the bottom is lined with baking paper. Firstly, grind the flax seeds, then add some water and raising and mix it until desirable consistency (sticky base for corpus). Add psyllium and mix it by hand. Add water if necessary. Sprinkle instant oat flakes and mix it – we should have a consistency that is thick but still spreadable. Add the rest of the water as needed. When the body mass is at the right density, start spreading it on the bottom of the form and spread a portion on the sides of the cheesecake as well.
Mix together the curd, yogurt and xylit and add gelatine stiffener according to the instructions on the package. Pour the mixture into the form and move it horizontally a little to even the cream. Decorate immediately. Make dots with zero Syrup and then pass through the center of each dot with toothpick (as if we wanted to divide it in a half), which will create mini hearts.
Leave the cake in the fridge for at least two hours, ideally overnight. Before serving peel off the sides of the corpus by using the blade/squeegee, then open the form. The cake is not just gluten-free, but mainly full of protein, perfect for hot summer days. You can add fresh fruit or mint.
