Method:
Let’s start by making the caramel. Mix coconut milk, almond butter and coconut sugar in a smaller pot. Bring this mixture to a boil and cook over low heat for 5 minutes. Finally, add a pinch of salt and let the caramel cool in the fridge, ideally overnight. The cold environment will make the caramel thicker.
Then you can start preparing the dough. Beat eggs with melted oil and almond butter in a bowl. Then take another bowl to thoroughly mix together all the dry ingredients – sugar, fine spelt flour, baking powder. Then add the liquid mixture from the first bowl and mix everything thoroughly again. When a smooth dough is formed, you can finally mix in the chocolate chips or pieces of chopped dark chocolate. Spread the dough on a baking sheet (we used 20×20 cm) lined with baking paper. Pour half of the caramel in random stripes over the entire surface of the blondies. Then take a spoon and run the opposite end of it over the surface of the dough from side to side in different spots so that the salted caramel is carefully mixed into the raw dough. This will create a marble effect.
Bake the blondies for 15 minutes at 180 °C. After taking them out, let them cool down and then pour over the remaining caramel, lightly sprinkle with coarse salt and serve.
