For the dough:
- 180 g instant oatmeal
- 150 ml of milk
- 50 g birch sweetener xylitol
- 20 g protein powder in vanilla flavor
- 1 tablespoon melted coconut oil
For the pudding:
- 400 ml of milk
- 50 g powdered pudding (vanilla/caramel/gustin)
- 4 tablespoons coconut sugar
- 2 tablespoons almond butter
For the frosting:
- 400 g cream-cheese
- 70 g protein powder in vanilla flavor
- 10 g of cream stabilizer/stiffener (or powdered gelatine)
- 1-2 teaspoons flavor drops in vanilla flavor
- dark chocolate (for garnishing)

Process:
Prepare the batter by mixing the oatmeal, milk, protein, xylitol, and melted oil. By combining these ingredients, you will get a thick dough that you have to divide into two equal parts. Pour each part separately into the baking pans with parchment paper (we used a form in size 22×22 cm), even it out and bake at 170°C for about 10 minutes.
Meanwhile, prepare your pudding by mixing powdered pudding, milk, and coconut sugar. Let’s bring the mixture to the boil with occasional steering. Once the mixture has simmered, put it on the side and mix in the almond butter. After letting the pudding to cool down, pour it over one baked dough that is still in the pan. Take the other baked dough out of the pan and put it on top of the pudding mixture, and gently press down.
Prepare your cream cheese frosting as last. Put cream cheese, protein, stiffener, and flavor drops into a bowl and mix carefully to nicely combine the flavors of the ingredients. Spread the mixture evenly on top of the cake. Let the cake sit in the fridge overnight. Cut the cake the next day, garnish with grated chocolate and serve!
