Crunchy nuts, delicious dough and a heap of sweet apples. This is what we think the perfect pie should look like. And that’s why we decided to create one. Apart from its delicious taste, it will also win you over with its irresistible cinnamon aroma that set the perfect autumn atmosphere. Don’t be put off by the large number of ingredients, the preparation is straightforward, and the result is really worth it.
Ingredients for the dough:
- 180 ml coconut milk
- 120 g rice flour
- 110 g cornstarch
- 90 g instant oats with chocolate flavour
- 90 ml water
- 50 ml maple syrup
- 30 g ground flax seeds
- a pinch of salt
Ingredients for the apple filling:
- 1200 g of peeled sliced apples
- 100 ml maple syrup
- 20 g cornstarch
- 10 g cinnamon
Ingredients for the crumble:
- 100 g instant oats with chocolate flavour
- 100 g date paste
- 65 ml water
- 50 g pecan nuts

Method:
The day before, mix the flax seeds with water and let them plump up. If you don’t want to wait until the next day, use chia seeds instead of flax seeds. With these, you just need to let them sit for about an hour for optimal consistency. Once the seeds are ready, you can start preparing the pie.
In a larger bowl, put the prepared gel made from 30 g seeds and water. Add the other ingredients for the dough, i.e. rice flour, cornstarch, instant oats, maple syrup, coconut milk and a pinch of salt. Mix everything together to form a compact dough. Put it in the fridge for 30 minutes.
In the meantime, start preparing the apple filling. Take the apples that you have peeled and cut into smaller pieces. Put them in a saucepan with the maple syrup, cinnamon and cornstarch and cook until caramelised. You can tell by the golden colour on the surface that they are ready. Next, take a cake tin (ours was 26 cm in diameter) and spray it with oil spray. You can also line the tin with baking paper. Then take the dough out of the fridge and press it evenly into the tin. Ideally cover the entire bottom and the inside of the mould all the way around. When you’re done, you can add the caramelised apple filling.
Then just mix all the ingredients for the crumble, i.e. chocolate-flavoured instant oats, chopped pecans, date paste and water. Sprinkle this mixture over the surface of the cake and put it in a preheated oven at 180 °C. Bake until golden brown, approximately 50 minutes. After baking, let it cool and then serve. It’s great, for example, with cottage cheese, which also supplements the protein.
