Cut the avocado lengthwise and remove the pit. Scoop out the avocado flesh with a spoon to create a larger nest for the eggs. Cut the bottom part of the avocado a little flat so that it does not roll over on the plate. Lightly sprinkle the avocado with lemon juice and salt, and first add the egg yolk into each hole and then with a spoon add eggs white as space permits. Sprinkle with salt and pepper, and bake the avocados on a baking sheet lined with baking paper or sprayed with olive oil at 200 °C for about 15-20 minutes.
