Fitness Recipe: Baked Zucchini with Quinoa and Cheese

Quinoa is a universal ingredient that is suitable for both sweet and savoury dishes, and also has an excellent nutritional value. Today we therefore used it in a simple but tasty recipe for baked zucchini with quinoa and cheese. This recipe is heaven in your mouth! Try it and see for yourself!

Ingredients:

  • 450 g zucchini
  • 200 g sliced canned tomatoes
  • 125 g ricotta cheese
  • 125 g mozzarella
  • 70 g quinoa
  • 20 g Parmesan
  • 2 eggs
  • 1 tsp dried basil
  • salt and ground black pepper to taste

Directions:

First cook quinoa according to instructions. In a larger bowl, mix it with zucchini chopped into thin half-moons, sliced tomatoes, eggs, dried basil, salt and ground black pepper to taste. Spread prepared mixture into a greased baking pan. In another bowl, mix ricotta cheese with grated mozzarella, Parmesan and spices to taste. Spread cheese mixture on top and bake at 180 °C until golden, approximately 30 minutes. After baking, serve with fresh herbs and vegetables. Enjoy your meal!
