To make this cake we need a cake pan with a diameter of 20 cm. First, lightly spray the bottom of the cake pan with coconut oil, and then sprinkle it evenly with coconut sugar. Cut approximately 150 g of ripe bananas into thin slices and place them on the sugar sprinkled bottom of the cake pan.

Then prepare the dough by mixing the remaining 150 g of banana, eggs and yogurt. Pour the smooth, lump-free mass into a bowl, add grated coconut, vanilla pudding powder and mix thoroughly. Pudding powder can be omitted, but the dough with pudding will be slightly more lightweight after baking. Pour the prepared dough into the cake pan, place in an oven and bake at 180 °C for approximately 25 minutes. After baking, invert the cake gently on the serving dishes and allow to cool. Enjoy!
