Today’s recipe will please everyone who loves strudels and apple pies, but doesn’t have time to prepare them. Battered apple rings can reliably compete with their great taste. Just cover the apple slices with batter, fry until golden and you’re done. Then it’s up to you how to decorate it. We made ours with quark cream, however, home-made protein ice cream would also work great.
Ingredients for the battered apples:
- 350 g apples (approx. 2 whole apples)
- 30 g (1 scoop) Just Whey Salted Caramel Protein Powder
- 5 g ghee
- 1 egg
- 50 ml low-fat milk
- cinnamon to taste
Ingredients for the quark mousse:
- 125 g soft low-fat quark cheese
- 15 g True Whey Vanilla Protein Powder
- 50 ml low-fat milk
- 10 g lyophilized raspberries for garnish (optional)

Method:
Mix eggs, protein and milk in a small bowl. Let the formed batter rest for a while. In the meantime, prepare the apples by cutting them into approximately 0.5 cm (0.2 inch) slices. Using a knife, simply cut out the core of each slice, leaving behind a triangle hole. Or alternatively you can use a small cookie cutter. Sprinkle the apples with cinnamon and start battering them.
Cover each slice from both sides with the prepared batter. Melt the ghee on a pan and put the battered apple slices straight in. Fry until golden brown on both sides.
As each of them gets done, take them out of the pan directly onto a plate with a paper towel to get rid of excess moisture. If you have some batter left after battering all the apples, you can fry it alone as a pancake. Then start preparing the quark mousse.
Whisk the quark cheese, protein powder and milk together in a bowl. You should end up with a soft, fluffy cream. Well, and that’s it. Serve the apples while they’re still warm, decorated with the quark cream and sprinkled with lyophilized raspberries.
