Salad doesn’t have to be boring. And once you taste this delicacy made from beetroot, apples and other tasty ingredients, you will surely agree. To make it even better, we also added a crunchy element in the form of pecans. And to tie it all together, a great dressing is a must. It is perfect, for example, as a side dish to meat or its plant alternatives.
Ingredients for the salad:
- 200 g peeled boiled beetroot
- 2 smaller apples
- 60 g pecans
- 50 g salad mix (mixture of mache lettuce, rocket, etc.)
- a small bouquet of mint
Ingredients for the dressing:
- 15 ml olive oil
- 2 tbsp maple syrup
- 1 tbsp balsamic vinegar (optional)
- salt to taste

Method:
Start by preparing the dressing. In a small bowl, mix all the ingredients – olive oil, maple syrup and balsamic vinegar. If you don’t want to use the vinegar, it’s fine. Then cut the apples into small cubes and the beets into small slices. Next, add the salad mix, finely chopped mint (keep some of it intact for the final touch), and finally the pecans. If you prefer smaller pieces of nuts, you can chop them beforehand and if you like your salad extra crunchy, you can fry them in a pan for a bit. Mix everything together, pour over the dressing, add salt to taste and mix thoroughly again. Then just add some mint leaves as a garnish and the salad is ready to be served.
