Ingredients for the cauliflower fritters:
- 350 g of cauliflower
- ½ a cup of flour based on your preference (we used rice flour)
- ¼ of a cup of psyllium
- 2 fistfuls of parsley
- 1 egg
- 2 tablespoons of flax seeds
- 1-2 cloves of garlic
- salt and black pepper according to taste
- olive oil in a spray

- 350 g of broccoli
- 30 g of cheddar
- ½ a cup of flour based on your preference (we used rice flour)
- ¼ of a cup of psyllium
- 1 egg
- 1 teaspoon of dijon mustard
- salt and black pepper according to taste
- olive oil in a spray

Instructions:
First of all, cook the cauliflower and broccoli separately in salted water. Broccoli cooks faster. When the heads are soft, cut them into small pieces. Add flour, psyllium, parsley, egg, flax seeds, crushed garlic, and spices to the cauliflower. In another bowl, prepare a broccoli mixture by mixing chopped broccoli, cheddar, flour, psyllium, eggs, mustard, and spices. Mix both mixtures well to combine all the ingredients. If a mixture seems too liquid, add a little psyllium or flour. Heat the pan and spray it with olive oil. Then, scoop out a mixture with a spoon into the pan, flattening the mixture and forming fritters. Fry the fritters over low heat from both sides for about 2-3 minutes until golden brown. Serve still warm topped with white yogurt, skyr, sour cream, or the popular zero-calorie sauce. Enjoy your meal!
