Who doesn’t like the legendary coconut bar in a blue and white wrapper with a palm tree on the label? We love it and that’s why we decided to prepare a home-made version. The inside is full of coconut flavour and aroma and it goes perfectly with its aromatic chocolate coating. And a cherry on top are the delicate coconut flakes, which reveal the flavour that dominates the bar. We guarantee you’re going to love it too.
Ingredients:
- 200 g dark chocolate
- 150 g coconut milk (ideally use as much of the top solidified layer as possible)
- 80 g grated coconut
- 80 g coconut flour
- 60 g plain protein powder
- 20 g coconut oil
- 15 g xylitol
- Vanilla Flavor Drops
- coconut chips for garnish (optional)

Method:
Start by preparing the main part of the bars. Mix the grated coconut, coconut flour, coconut milk, xylitol, coconut oil, protein powder and Flavor Drops. Work the whole mass thoroughly and then start shaping the bars. They should be flat, with a length of about 6 cm and a width of 2 cm. If you have a suitable mould at home, be sure to use it. Put the prepared pieces in the freezer for an hour or so. Next, on medium heat, melt the chocolate. Then take the bars and either dip them in the chocolate or pour the chocolate over them.
At the end, you can decorate the bars with coconut flakes. Finally, let them harden in the fridge for about an hour and they’re ready to be served. Make sure you always put them back in the fridge when you’re done eating.
Our tip: If you want the bars to be more colourful, you can sprinkle them with some crushed freeze-dried fruit.
