Who doesn’t love the legendary chocolate cake that resembles a mound of dirt that a mole left in your backyard? Today, we’ve taken inspiration from its flavours and translated them into these little cupcakes. You’ll see for yourself that the combination of chocolate, quark and banana is definitely a hit. The great advantage is that one cupcake has no more than 130 kcal. This makes it a great light dessert, even when losing weight.
Ingredients for the cake dough:
- 30 g chocolate protein
- 30 g xylitol
- 15 g cocoa
- 4 eggs
- 2 teaspoons baking powder
Ingredients for the filling:
- 350 g soft fat-free quark
- 20 g dark chocolate
- 20 g honey
- 1 banana

METHOD
Put all the ingredients for the dough (chocolate protein, xylitol, cocoa, eggs and baking powder) in one bowl and whisk together until smooth. Then take a muffin tin and line 8 holes with silicone or paper cupcake liners. Fill these cupcakes about halfway with the prepared batter. Then place in a preheated oven at 180 °C for approximately 20 minutes.
After baking, let the cupcakes cool down and in the meantime start preparing the filling. Mix the quark with honey. Then take the dark chocolate and grate it coarsely. If you want the chocolate to grate better, freeze it for a while beforehand. That way it won’t melt in your hands when you grate it. Once it’s grated, carefully stir into the quark.
Use a spoon to hollow out the middle of the cooled cupcakes and set the selected pieces of the cake shell aside. You have to be careful not to overdo it and keep the whole outer surface intact. Then, carefully put the filling inside, a piece of banana and more of the filling on top.
Then sprinkle with the crumbled pieces that you hollowed out from the inside. The cupcakes are finally ready. Now you just need to put them in the fridge and let chill for a couple of hours.
