- 600-700 ml milk
- 500 g low-fat soft curd cheese
- 200 g finely ground spelt flour
- 150 g whole-grain spelt flour
- 100 g chocolate
- 30 g Just Whey Protein in vanilla flavour
- 20 g coconut sugar
- 2 eggs
- 1-2 spoons honey

Directions:
First you need to prepare pancakes. Mix both flours with sugar, protein, eggs and add milk according to the consistency of the dough. You should get a smooth and runny dough. Fry the pancakes for about a minute from each side in a pan sprayed with olive oil. Then prepare the filling by melting the chocolate in the microwave or in a water bath. Carefully mix 3 – 4 tablespoons of curd cheese into it. This will cause the chocolate to cool down without curdling. Then mix the remaining curd cheese into the chocolate and sweeten the cream with honey to your taste. Apply a thin layer of cream to the cooled pancakes and layer them on top of each other. Crushed lyophilized raspberries can also be layered between some pancakes. Let the pancake cake harden in the refrigerator for at least an hour and decorate it with melted chocolate or calorie-free chocolate syrup and lyophilized raspberries before serving.
