You are not a fan of pudding powders but would like to enjoy a dessert with a creamy consistency? If so, give this no-bake chia pudding a chance. Just combine chia seeds with liquid and let them expand. We used coconut milk for this purpose, which, together with the banana, creates a perfect flavour combination. On top of that, a big plus is that one serving has over 20 g of protein.
Ingredients for the chia pudding:
- 400 ml coconut milk
- 200 g low-fat curd
- 30 g coconut protein
- 5 tbsp chia seeds

- 90 g banana
- 10 g coconut chips

Directions:
Combine chia seeds with coconut milk in a bowl, and let them sit for at least 4 hours, ideally overnight. Then add low-fat curd and protein to the mixture, which should have a gel consistency, and mix thoroughly. Divide this mixture into 3 cups. Finally, slice the banana and decorate the puddings. At the end, sprinkle a few slices of coconut chips on each pudding.
Our tip: You can also put coconut chia pudding in a jar of hazelnut butter. This way it will not leak from the closed jar, and you can easily take this goodie anywhere.
