Are you bored of eating curd cheese by itself after training? Come and try to prepare these simple slices. You can easily put together a refreshing dessert that tastes great with coffee or as a snack or breakfast. Is there anyone who could resist the combination of sweet curd cheese and chocolate?
Ingredients for the dough:
- 40 g xylitol
- 35 g whole grain spelt flour
- 10 g cocoa
- 3 tbsp of water
- 2 eggs
- 1 tsp baking powder
Ingredients for the cream you’ll need:
- 500 g soft light curd cheese
- 50 g xylitol
- 1 tsp vanilla extract

- 100 g dark chocolate
- 50 ml of 10% cooking cream

Method:
First, let’s start preparing the dough. Take the eggs and separate the yolks from the whites. Add xylitol, a little water (approx. 3 tbsp) to the yolks and beat them into a thick foam. In a bowl, mix all the dry ingredients – sifted flour, cocoa and baking powder, and mix them into the yolk mixture. Then take the bowl with the egg whites (you can add a pinch of salt) and beat them until soft peaks. Then carefully mix it into the yolk mixture. Next, prepare a smaller tray (we used 20 x 20 cm), line it with baking paper and pour the batter. Put it in an oven preheated to 180 °C (356 °F) and bake for about 15 minutes. You can check if the dough is baked by using a wooden toothpick. It should come out of the dough dry.
Let it cool and in the meantime start preparing the cream. Put soft curd cheese, xylitol, and vanilla extract into a bowl and mix well. Once the dough has cooled, spread the cream on top. Put the base prepared in this way in the refrigerator so that the cream hardens slightly, and start preparing the topping. All you have to do is melt the chocolate and cream in a microwave or water bath and mix thoroughly. Then spread the glaze evenly on the cake covered by cream and that’s it. Before you cut the dessert, it needs to be left to cool in the fridge for at least a few hours so that the topping hardens. Therefore, put all your willpower into it and try to resist the urge to try it earlier. It takes a lot of self-control, but the result is worth it.
Our tip: If you want the dessert to be even more colourful, you can add crushed freeze-dried fruit to the curd cheese. It will taste great with raspberries, strawberries or banana. And those of you who desire an even higher protein content can also mix your favourite vanilla protein powder into the curd cheese.
