Fitness recipe: Fitness apple bread pudding loaded with protein

As a child, did you always look forward to lunch when you knew that an apple bread pudding will be served? It was kind of a small holiday for us, and even though we are no longer that children, we can remind ourselves of that joy! That is why we have prepared a fitness version of a traditional bread pudding with apples for you! It is full of protein and contains a minimum amount of fat. We probably don’t have to tell you more, let’s bake.

Ingredients:  

  • 5 graham rolls (250 g)
  • 250 g lump curd
  • 30 g of walnuts
  • 2 big size apples
  • 1 tsp of cinnamon

For the sweet cream mixture:

Instructions:

First, let’s prepare the sweet cream mixture by mixing milk, protein and xylitol. Then wash apples and grate them finely.

Cut the bread rolls into thin slices and let them soak in the cream mixture. After soaking, add bread mixture in a baking pan (we used a 25x17cm pan). Then add a layer of grated apples, crushed farmer’s cheese, cinnamon and walnuts, and continue until all the ingredients are used up finishing with a layer of apples and farmer’s cheese. Bake for 30 minutes at 185 ℃. Meanwhile, use mixer to whisk egg whites, xylitol and a pinch of salt until the mixture is stiff. After 30 minutes of baking, use the meringue topping to cover the pudding and bake for 10 more minutes at 170 ℃. Bon appetite!
