Put flour, protein, xylitol, baking powder into the bowl and mix it. After that, add melted coconut oil, curd cheese, milk, and egg yolks separated from egg whites and mix it all together, until you get a consistent smooth dough. Then whisk the egg whites with a pinch of salt to stiff peaks. Right after, gently stir the whipped egg whites into the dough with a spatula. Spray the Bundt cake form with oil spray, sprinkle some flour, and pour the dough into it. Preheat the oven at 180 °C and bake the Bundt cake for about 45 minutes. Your Bundt cake is done, when you stick a wooden stick inside, and it’s completely dry when you pull it out. When the Bundt cake is done, let it cool down in the form.
