Fitness recipe: Fresh vegan apricot pie

Do you also have a garden full of delicious apricots? Use them to prepare this healthy, and at the same time tasty and fresh apricot pie, which is really easy to prepare! Enjoy the combination of the taste of sweet apricots and the vanilla taste of protein, which will enrich this treat with a good dose of protein. Let’s get to it!

Ingredients:

  • 600 ml unflavoured almond / coconut milk
  • 300 g instant oatmeal without flavor or with vanilla flavor
  • 300 g pitted apricots
  • 100 g vanilla flavored soy protein isolate
  • 25 g chia seeds
  • 10 g grated coconut
  • 1 baking powder
  • 1 tsp baking soda

Preparation:

First of all, we mix all loose ingredients togetheroatmeal, soy  isolate, chia seeds, baking powder and baking soda. Stir and add vegetable milk. Mix the dough thoroughly until a uniform mixture is obtained. Prepare a baking form which we will bake the cake in (we used a round form with a diameter of 20 cm) and spray it with coconut oil spray or line it with baking paper. Meanwhile, cut the apricots into slices, decorate the top of the cake with them and sprinkle with coconut. Gently press the apricots so that they partially sink into the dough. Bake the cake for 50 minutes at 180 ℃. After baking, let the cake cool down, cut it and enjoy it!
