Even though pizza is one of the dishes that are relatively simple to prepare, you can have a lot of fun with it. The combination of ketchup, rocket, cheese and mushrooms will surely win your heart. It is made from gluten-free dough, so even those who suffer from coeliac disease can enjoy it. It is also suitable for vegetarians. So let’s get to it.
Ingredients:
- 250 g low-fat quark
- 70 g gluten-free oats
- 15 g unflavoured protein powder
- 20 g light Gouda (sliced or grated)
- 150 g canned or fresh mushrooms
- 50 g corn
- 1 cup of rocket
- ZERO ketchup to taste
- Seasoning: pizza mix, basil, salt and garlic powder to taste

Method:
In a bowl, mix oats, protein powder and a pinch of salt. Then mix in the quark.
Then take a round cake form, line the bottom with baking paper and put a spoonful of dough on it. Push it in to create a patty that copies the round shape of the mould. Bake the dough in the mould in an oven preheated to 180 °C (356 °F) for 18-20 minutes.
In the meantime, wash the rocket and drain and rinse the canned mushrooms. If you are using fresh ones, rinse them, clean and cut into thin slices. Once the dough is baked, take it out of the oven and smear with ZERO ketchup. Depending on how you like it, you can sprinkle the pizza with pizza mix, basil, salt and garlic powder.
Then gradually decorate the pizza with the mushrooms, rocket, corn and Gouda.
Finally, bake the pizza for 15 minutes, still at 180 °C.
Take the pizza out of the oven and serve immediately. Depending on your taste, after baking, you can decorate it with some more cheese or fresh rocket.
