Fitness Recipe: Greek Pasta Salad

The summer season is perfect for quick vegetable salads. They taste great even on their own as a light lunch and dinner, but may present a healthy side dish for barbecue. We are bringing you a recipe for a traditional Greek salad with feta cheese and pea pasta. These two ingredients have taken its irresistible taste to another level and enriched it with a great amount of plant protein. Don’t hesitate and let’s prepare it together.

Ingredients:

  • 250 g pea pasta
  • 1 cucumber
  • 2 peppers of different colour
  • 200 g tomatoes
  • 150 g Feta cheese
  • 100 g black olives
  • 50 ml olive oil
  • a handful of parsley
  • juice from 1 lemon
  • salt and ground pepper to taste

Directions:

Cook the pasta according to the instructions and drain it. Cut the cucumber, peppers, tomatoes and olives into smaller pieces and finely chop the parsley. Mix pasta, vegetables and parsley thoroughly together. Then add the dressing which is prepared by mixing olive oil, lemon juice, salt and pepper. Finally, add crumbled feta cheese to the salad and serve. Bon appétit!
