The hot summer weather literally encourages us to reach for a refreshing ice cream. And if you don’t have enough in the freezer or want a treat without unnecessary additives, it’s best to make your own. We used strawberries and bananas as our base, which created a delicious sweet taste and a smooth, creamy consistency. However, you can add other fruits or goodies like peanut butter. Then it’s up to you whether you want to have an ice cream on its own or perhaps garnish protein pancakes with it.
Ingredients for the ice cream:
- 350 g fresh strawberries
- 3 ripe bananas
- a handful of fresh mint

Method:
Peel the bananas, divide them into several smaller parts and put them in a blender. Remove the green leaves from the strawberries, rinse under running water and add to the bananas in the blender. Blend together into a smooth purée. If the fruit itself is difficult to blend, add a little water. If you prefer sweeter ice creams, you can also add xylitol or other sweetener or sugar. Then pour the purée into a freezer-safe container and freeze for at least 2-3 hours.
Once the mixture is frozen, transfer it to a blender and blend again. You can also use a hand blender. Then serve right away, so the ice cream doesn’t melt. To make it look even better, you can garnish it with mint and lyophilized strawberries. It will also taste great garnished with ZERO chocolate syrup.
Our tip: If you want the ice cream to have a creamier consistency, you can add a spoonful of coconut milk. And those who want to add protein to their ice cream can add a scoop of protein (vegan for vegans) to the fruit in the blender. Lovers of crunchy treats can also top it with protein granola or roasted and chopped nuts.
