Blend the peanuts into fine flour and whisk with peanut butter, erythritol, egg and baking soda. Shape the sticky dough into balls with wet hands, then press balls down with the palm into the shape of cookies on a baking sheet lined with baking paper. Leave a space between the cookies, as they will spread while they bake. Bake at 180 °C for about 10-15 minutes.
