Today’s dessert with a crunchy base, mouth-watering cream and the taste and smell of strawberries will definitely strike all cheesecake lovers fancy. In this no-bake dessert, we mixed mascarpone with quark to increase the protein content and reduce fat. The base consisting of oats and coconut oil gives the whole thing a beautiful aroma. So, who’s up for this treat?
Ingredients for the base:
- 160 g oats
- 40 g cashews
- 40 ml coconut oil
- 30 ml maple syrup
Ingredients for the filling:
- 400 g soft fat-free quark
- 200 g mascarpone
- 1 tsp vanilla extract
- Vanilla Flavor Drops to taste
Ingredients for the strawberry topping:
- 150 g frozen strawberries
- 1 tbsp maple syrup
- 1 tsp cornstarch
- a bit of water

Method:
First, start preparing the base. Blend the oats and cashews into flour and mix with softened (not liquid) coconut oil and maple syrup. Press this mixture into the bottom of a smaller tray lined with baking paper (we used 20×20 cm) and let it sit for at least 15 minutes in the refrigerator to make it more solid. In the meantime, prepare the remaining layers, starting with the filling. Beat the mascarpone with quark, vanilla extract and sweeten with Vanilla Flavor Drops as per your taste. When you’re happy with the taste of the cream, start with the strawberry layer.
Cook the frozen strawberries with a little bit of water until soft. Then use a stick blender to blend them until smooth, sweeten with maple syrup and put them back on the stove to cook. When strawberries start to boil and bubble, it’s time to add cornstarch mixed with a bit of water. Stir it all well and cook until thickened. Then remove from the stove and let cool at least partially.
When you have all parts ready, you can assemble the dessert. Take the base out of the fridge and cover it evenly with the prepared quark cream. Pour the strawberry topping on top, then using a handle of a spoon swirl the topping, creating a marble effect.
Let the dessert harden a bit more in the fridge before slicing. And that’s it. It’s ready to be served.
