If you like pies, you’ll love our recipe for galette. For the filling we have chosen a great combination of quark cheese, pears and walnuts. It goes perfectly with the soft dough, which is not leavened, so anyone can prepare it. Then all you have to do is decide whether to enjoy the galette as a snack or for breakfast.
Ingredients for the dough:
- 180 g wholemeal spelt flour + 20 g for flouring the rolling pin
- 60 g coconut oil
- 40 ml water
- 30 g fat-free soft quark cheese
- 20 g xylitol
- pinch of salt
Ingredients for the filling:
- 120 g fat-free soft quark cheese
- 30 g vanilla protein
- 2 pears
Other ingredients:
- 30 g walnuts
- 1 egg yolk

Method:
Mix the flour, xylitol and salt in a bowl. Then add quark (30 g), coconut oil and water and knead a firm dough that should not be sticky. Put the prepared dough in the fridge and start preparing the filling.
In another bowl, whisk the quark cheese and protein until smooth. Peel and thinly slice the pears. Then remove the chilled dough from the fridge and roll out on a floured surface to a round shape. Then you can start spreading the dough with the quark cheese mixture (leave about 3 cm from the edges without filling). Lay the sliced pears evenly on top. Sprinkle the chopped walnuts over the top.
Fold edges of the dough inwards and brush with the egg wash. Bake the galette until golden brown at 180 °C for about 30 minutes. Let it cool before slicing and then enjoy.
