Method:

Start by preparing the salmon coating. Mix honey with mustard, salt, lemon juice and olive oil in a bowl. Take the salmon fillet and cut it into 3 pieces. Rub the prepared coating over the exposed part of the salmon (not on the skin). Finely chop the pistachios and sprinkle them over the marinated salmon. Transfer the salmon to a baking tray, skin side down, and place it in the oven preheated to 180 °C. Bake for 15–25 minutes, depending on how thick your fillets are.

While the salmon is cooking, start preparing the salad. Wash the salad leaves, chop them up and mix them with olive oil, salt and lemon juice. Then add cherry tomatoes cut into smaller pieces, halved olives and mix everything thoroughly. Finally, add sliced ​​avocado and it’s done. Divide the salad into 3 plates and place a slice of salmon on each. Decorate with lemon and it’s ready to be served.
