Perhaps nothing is more typical of Christmas than gingerbread. It normally serves as a great snack with tea or coffee. But we decided to change this up a bit and created a delicious dessert that tastes like gingerbread, but also contains fluffy quark cream and juicy apple in a jar. This Christmas treat will get you in the mood for winter, and satisfy any sweet cravings to the max.
Ingredients for the dough:
- 100 g whole grain spelt flour + 20 g of extra for dusting
- 30 g xylitol
- 20 g pecans or walnuts
- 20 g vanilla protein powder
- 20 g honey
- 1 egg + 1 for egg wash
- 1 tsp gingerbread spice
- ¾ tsp baking soda

- 250 g fat-free quark cheese
- 20 g honey
- 15 g vanilla protein powder

Method:
Finely blend the nuts in a blender or grind with a grinder and mix them with flour, xylitol, protein powder, baking soda and gingerbread spice. Then add the egg and honey and form a smooth, non-sticky dough. If it’s sticky, add a little more flour. Let the dough rest in the fridge for a while and then roll it out on a dusted board to a thickness of approximately 3 mm. Cut out a few gingerbread cookies for decoration (small shapes work the best) and leave the rest of the dough rolled out with holes as it is. Carefully transfer the gingerbreads and the rest of the rolled dough onto a baking sheet lined with baking paper, brush with the egg wash and bake at 170 °C for about 8–10 minutes.
In the meantime, prepare the cream. In a bowl, beat the quark cheese with honey and vanilla protein powder until you get a smooth consistency. Then start preparing the apple layer. Peel the apples, remove the cores and cut them into small cubes. In a pot, lightly simmer them together with xylitol, water, lemon juice and cinnamon. Don’t forget to stir so that the apples don’t stick to the pot. At this point, you’re almost there. Let the gingerbread sheet cool and break it into smaller pieces and split them evenly into 3 piles. Part of them goes on the bottom of the jars, followed by a layer of the quark cream and chilled apples.
Keep repeating this process until you run out of ingredients. Leave the gingerbread cups to cool in the fridge and they’re almost ready to be served. Of course, don’t forget to decorate them with the prepared gingerbread cookies.
