What can be better than delicious waffles that will bring a scent of vanilla and cinnamon to your kitchen? In today’s recipe, we included pumpkin purée, which adds an excellent taste. On top of that, it will help you meet the recommended daily intake of vegetables. Then it is up to you what will you add. Will you use fruit and pecans just like us, or will you choose peanut butter, for instance?
Ingredients for pumpkin waffles:
- 250 g einkorn wheat flour (or you can use fine wheat flour)
- 240 ml almond milk (or you can use cow’s milk, but the recipe will no longer be vegan)
- 200 g pumpkin puree
- 80 ml maple syrup
- 1.5 tbsp apple cider vinegar
- 2 tsp baking soda
- 1 tsp cinnamon
- vanilla pod to taste (or you can use vanilla sugar, flavouring, or Flavor Drops)
- a pinch of Himalayan salt
Ingredients for the decoration:
- 100 g tangerines
- 50 g blueberries
- 30 g pecans
- 20 ml date syrup

Directions:
Take a bowl and mix all the loose ingredients (flour, baking soda, cinnamon, and a pinch of salt). Then add the remaining ingredients (almond milk, pumpkin purée, maple syrup, apple cider vinegar, Flavor Drops, or the inside of vanilla pods). Mix the waffle dough thoroughly. Then take a waffle maker and add oil spray to prevent the waffles from sticking. Prepare waffles from the whole mixture. The number will depend on the size of your waffle maker. Garnish the waffles before serving. We used tangerines, blueberries, pecans, and date syrup.
