Method:

Start by preparing the dough. In a large bowl, mix the sifted flour with xylitol, beetroot powder and baking powder. Add softened butter (must not be liquid), milk, vanilla extract and knead the dough by hand. It should have a firm and non-sticky consistency. Finally, stir in about 20 g of chocolate chips, and set the rest aside. Form the dough into 9 equal sized balls and place them on a baking tray lined with baking paper. Then press each one with the palm of your hand and shape them to resemble round cookies. Squeeze the remaining chocolate chips into the cookies as desired for decoration. Place the cookies in a preheated oven at 180 °C and bake for 12 minutes.

While the cookies are baking, carry on with the frosting. In a bowl, whisk together quark, mascarpone, flavour drops and a pinch of beetroot powder to give the cream a pink tinge. The resulting mixture should have a smooth and fluffy consistency. Put it in the fridge while you wait for the cookies to finish baking.

Allow them to cool completely and spread evenly with the prepared frosting. Finally, sprinkle with crushed lyophilized strawberries and you’re all set.
