If you are craving something salty, we’ve got a great alternative to classic crisps. Try the recipe for fluffy curd scones with Parmesan cheese and let their delicate dough melt on your tongue. Ingredients:
- 250 g whole-grain spelt flour
- 130 ml milk
- 100 g soft low-fat curd
- 30 g Parmesan cheese
- 30 ml rapeseed oil
- 1 egg
- ½ packet dry yeast (4 g)
- 1 tsp cane sugar
- 1 tsp Himalayan salt
- 1 tsp thyme (fresh/dry)

Directions:
First of all, prepare the sourdough – mix the sugar with the yeast in warm (not hot) milk and let it rest for about 5 minutes. Meanwhile, mix the flour with salt, thyme and grated Parmesan in a larger bowl. Then pour the sourdough, oil, curd to the bowl and knead a uniform and rather non-sticky dough. Cover the dough with a clean cloth and let it rise in a warm place for about 1 hour. When the dough has risen, roll it out on a board covered with flour, so that it’s approximately 1.5 cm thick. Start cutting out individual scones from the dough and place them on a baking tray lined with baking paper. Let them rise a little more on the tray for at least another 15 minutes. Finally, brush them with egg wash, sprinkle with sesame seeds and a few grains of salt. Bake the scones at the temperature of 180 °C until golden brown, i.e. for about 10-15 minutes depending on their size. The scones can be served immediately after baking. Enjoy every bite!
