Ingredients:
- 1 cup spelt flour
- 1 ½ cup milk
- ½ cup Just Whey Protein in chocolate flavour
- 50 g xylitol
- 2 eggs
- 3 tbsp cocoa
- 1 package baking powder
- ½ tbsp cinnamon

- 60 g dark chocolate
- 1 tbsp coconut oil

Directions:
Mix flour, protein, xylitol, cocoa, baking powder and cinnamon in a larger bowl. Mix the milk and eggs in another bowl. Subsequently, mix the two mixtures thoroughly so that all the ingredients combine. You should get a liquid dough. Pour the dough on a baking sheet lined with baking paper or sprinkled with flour. Bake at 180 °C for about 30-40 minutes. You know your gingerbread is ready with the help of a wooden toothpick, which must be dry after removal. After baking, let the cake cool. Then cut the gingerbread lengthwise, carefully place the upper part next to it and coat the lower part with jam. Cover the lower part with the upper part. Prepare the glaze in a water bath by melting chocolate and coconut oil. Cover the top of the cake with melted glaze and let the gingerbread cake harden in the fridge.
