Ingredients:
- 250 g mushrooms
- 130 ml egg whites
- 40 g spinach
- 1 egg
- ½ onion
- garlic to taste
- salt to taste
- black pepper to taste

Method:
In one bowl, mix eggs, spinach and liquid egg whites with a stick blender.
Season the mixture with garlic, black pepper and salt and mix it well again. Then heat up a frying pan sprayed with cooking spray and fry the omelette from both sides. When it’s done, set it aside. Spray the pan with some more oil and then fry the onion and chopped mushrooms with some salt and pepper and let it simmer.
When you’re done, plate the omelette, fill it with mushrooms and it’s ready to be served.
