Who says muffins have to be sweet? Today we set aside recipes for muffins with chocolate, cream or other goodies and decided on a savoury version. The main part consists of tuna with cottage and egg whites. You probably won’t be surprised that these muffins are packed with protein. We also used wholemeal flour to achieve the right consistency and optimal carbohydrate values. Then we just added some spices. Enjoy tuna muffins as a delicious savoury breakfast or a quick snack.
Ingredients:
- 240 g tuna in brine
- 200 g light cottage cheese
- 100 g spelt wholemeal flavour
- 70 g liquid egg whites
- oil spray
- dried garlic (you can also use fresh-pressed)
- basil
- black pepper
- salt

The preparation is super simple. Take a bowl and mix tuna with cottage cheese. Then add the egg whites, stir and add flour. Mix everything together until well combined. Finally, sprinkle with basil, garlic and add salt and pepper.
And you can start making muffins. If you have a muffin tray, line it with paper cups or spray with oil to prevent from sticking. If you don’t have a tray, put muffin paper cups on a baking sheet and fill them with the dough. If you want your muffins to have a perfect shape, use two instead of one paper cup (one inside another), or like us, use silicone moulds. You should get about 12 pieces of the dough. Then place the muffin tray in the oven preheated to 200 °C and bake for about 20 minutes.
