Fitness Recipe: Vegan Spaghetti with Cashew Sauce

Today we did not slack off and decided to make a vegan sauce. But don’t worry, the preparation is as simple as can be, and to conjure up a perfectly smooth and creamy consistency only two ingredients are required – water and cashew nuts. Thanks to the fact that we Zero Spaghetti, a large serving of this dish contains only approximately 370 kcal. This makes it an ideal dish for a weight loss diet.

Method:

Start by soaking the cashew nuts in water for at least 2–3 hours. Blending will then be much easier and more gentle on your blender. Then prepare Zero Spaghetti according to instructions. Slice the mushrooms and set them aside in a bowl.

Put the soaked cashew nuts and water in a blender and blend until smooth.

Heat a pan on the stove sprayed with oil spray. Fry the mushroom slices in it. Once softened, add the blended cashew sauce. Season with salt, black pepper and lemon juice to taste.

If the sauce is too thin, cook for a few minutes longer to evaporate the excess water. If it is too thick, add a little water. Once the sauce is exactly to your liking, you are ready to serve. Put the prepared spaghetti on a plate, pour the sauce over it and garnish with a slice of lemon or your favourite herb.

Our tip: If you don’t like Zero pasta, you can use classic spaghetti or legume pasta to increase its protein content. You can also adjust the sauce a bit. Simply use plant cream instead of water and flavour with nutritional yeast to give the dish a cheesy flavour.
