Who wouldn’t love cheesecake? This worldwide favorite dessert is experiencing a huge “boom”, and that’s why we decided to prepare a healthier version of it in the form of protein cheesecake cupcakes. They contain curds, Greek yogurt and protein powder, making them full of protein. Of course, the basis is not flour, but oat flakes and nuts, which also provide a dose of healthy fats. They are flavored with forest fruit and agave syrup, which you can replace with honey, maple syrup or stevia. For cupcakes we need:

• 100 g oat flakes
• 50 g dates
• 50 g walnuts
• 1 tablespoon of water

Put all the ingredients in a blender and make a mixture. We put it in muffin pan and put it in the refrigerator.

For a layer of fruit cream we need:

• 125 g curds
• 50 g of frozen fruit
• 2 tablespoons of agave syrup (honey or other sweetener)
• 2 tablespoons of Greek yogurt

We put everything in the blender again, but this time we try to make a dense cream. Evenly divide it into the bodies of the cupcakes, which so far have solidified in the refrigerator.

For protein cream layer we need:

• 125 g of curds
• 1/2 scoops of True Whey protein (we used white chocolate and raspberry flavor)
• 1 tablespoon of Greek yogurt
